Are there any tracks open for hikers the ending of May ? or should I plan my trip in June?

Depends if you will hike in Poland Tatra park (called TPN) or Slovak Tatra park (called TANAP). In Slovak park, yes the rule is we can hike from 15 June for all tracks above mountain shelters. In Poland no such condition but make sure to check avalanche warnings in May: http://lawiny.topr.pl/
